Dhondt Grellet is a winery founded by Eric Dhondt and Edith Grellet, and the name Dhondt Grellet is a combination of their surnames. In 1986, they stopped selling grapes to négociants and decided to make their own champagne, marking the beginning of Champagne Dhondt Grellet. It was also at this time that they switched to organic farming methods. In 2012, their son, Adrien Dhondt, took over the winery at the young age of 21.
Adrien Dhondt focuses on delicate terroir expression and has slowly increased the number of cuvées. Shortly after taking over the winery, he was praised for raising the family’s wines to a new level and was named one of the most promising producers under 30 years old by critics. In 2017, he had the honor of being selected as Producer of the Year at the Trophées Champenois, an annual award ceremony for Champagne producers.
The winery is located in Flavigny, next to Avize in the heart of the Côte des Blancs, and most of its vineyards are located in Cramant Grand Cru, Chouilly Grand Cru, and Cuis 1er Cru. The total vineyard area is approximately 6 hectares. Chardonnay is also grown in Sezanne, and although Chardonnay is the main variety of the domaine, Pinot Noir is also grown in Avenay-Val-d’Or 1er Cru in the Vallée de la Marne. The vineyards are mainly located on south-facing hillsides and limestone rich soils. The average age of the vines is 55 years, and they absorb nutrients from deep within the soil, beautifully expressing the terroir.
Since 1986, the domaine has been making champagne by blending reserve wines accumulated using the Solera method with vintage base wines. The winemaking process involves élevage in wood for 8-9 months, minimal sulfur, and low-dosage disgorgement.
Adrien Dhondt launched his own negociant brand with his first vintage in 2018. He started this project out of a desire to explore the diverse terroirs of Côte des Blancs. Every year, he selects small plots in the Côte des Blancs region to produce a variety of wines.
