From the very beginning, Champagne Clandestin has been dedicated to showcasing the terroirs of the Côte des Bar and placing wine at the center of this unique appellation: Champagne. For Clandestin, blending is about revealing the distinct character of each parcel.
That’s why the cuvées, Boréal and Austral, are crafted based on their north- or south-facing exposures. Other defining elements, such as the geological layers beneath their vineyards, will also become part of the story they share in the years to come.
Champagne Clandestin’s approach in the cellar is guided by adaptability rather than rigid rules. Each harvest brings its own challenges, and new vineyard plots continue to shape our cuvées. Climate change has forced us to navigate increasingly hot harvests.
Today, all of the wines are aged in 500- and 600-liter barrels—vessels that allow Pinot Noir to express both its depth and freshness. The winery has phased out 228-liter barrels in order to preserve the wines’ mineral tension.
