Champagne Chavost is a grower Champagne house located in the village of Chavot-Courcourt, just outside Épernay in the Côteaux Sud d’Épernay subregion of Champagne, France. Known for its commitment to authenticity and sustainability, the winery has recently gained attention for its innovative and natural approach to Champagne production.

 

The cooperative of Chavost was originally founded in 1946, bringing together local winegrowers to produce Champagne collectively. Over the decades, it developed a reputation for solid, traditional Champagne styles.

 

In recent years, however, under the leadership of cellar master Fabien Daviaux, Chavost has reinvented itself by embracing a more natural winemaking philosophy. They emphasize minimal intervention, respect for the terroir, and a desire to express the character of their vineyards with purity and honesty.

 

Champagne Chavost stands out for its “Sans Soufre Ajouté” (no added sulfites) philosophy, which is rare in Champagne. Instead of relying on sulfur to stabilize wines, Fabien carefully manages the entire winemaking process to preserve balance and freshness naturally.

 

Chavost has been praised by sommeliers and wine critics for its bold move into natural Champagne production. Their sulfite-free wines, once a rarity, now place them at the forefront of an important movement within Champagne-proving that innovation can coexist with tradition.
